INGREDIENTS:
1 deep dish pie crustPROCEDURE:
1/4 cup pickled sweet red peppers, sliced
1 Tbs. olive oil
4 Cups fresh spinach, stemmed
4 eggs
1 cup heavy cream
4 oz. feta cheese, crumbled
Preheat oven to 350 degrees.
1. Saute peppers in olive oil until slightly softened.2. Add spinach and saute until wilted.
3. Mix eggs and heavy cream.
4. Place feta cheese in pie shell. Add spinach mixture the egg mixture.
5. Bake for about 20 minutes or until set.
